How fried cassava root is made

Cassava root can be eaten countless ways, from raw to boiled to mashed to fried and more.  We all fell in love with fried cassava root - here's how it is made.

This is the cassava tree.  It never grows to be very high, but its root system is quite extensive.
This woman is peeling potatoes and cassava root.  The reddish pieces are potato and the brown pieces are cassava root.


Here is the before and after picture - on the top is cassava root after it has been pulled from the ground and on the bottom is a piece of fried cassava root.
Finally, the pieces are salted and served up - they are good both hot and cold and were served to us as a mid-morning snack.
